Lamb, leeks and beans

A delicious and warming stew from one of my favourite cookbooks – Nigel Slater’s Kitchen Diaries. Not only does it contain great recipes and photography, it’s a good read as well as he documents what he eats/makes/gets inspired by through the year.

We substituted white kidney beans for haricot beans – not a problem.

I reckon you really need the mint, preferably fresh, and the cream to make this dish really come alive.

Very warm and comforting on a chilly January evening.
