Most successful Indian meal to date

I own Madhur Jaffrey’s Indian Cookery and have attempted dishes from it over the years. With the exception of a single aubergine recipe, nothing I’ve ever made has turned out right. These aren’t disasters, mind you – they just don’t taste as great as they should. I was starting to think it was Madhur’s fault.

But tonight we tried three new recipes and they were delicious. And super simple.

There is Gujarati Carrot Salad, made with grated carrots, salt and black mustard seeds

Red lentil and mint dhal (from our new book The Flavour Thesaurus, which lists ingredients and what compliments them. Includes recipes. Genius idea.)

And finally, the spicy baked chicken, which is chicken marinated in a paste of cumin, paprika, cayenne, garlic, salt, pepper and lemon juice. Delicious.

Best of all, without even trying, we ended up with three dishes that really complimented each other in flavour and texture.

Now to sit on the sofa and bask in the glory of my (momentary) mastery of Indian cookery.
