What to do with jerusalem artichokes? Make risotto.

This was the question and answer when we received our veg box this week. Thankfully, our provider (Riverford) give you recipes for the box ingredients each week, which makes it much easier to use everything up.

You start by making a jerusalem artichoke puree. Looks pretty disgusting, to be honest.

And you use this to make the risotto. It was alright – very subtle. We had leftovers the next day and put some asparagus on it (very unseasonal, I know). It was a pretty good combo. The recipe also suggests adding mushrooms. But I don’t like mushrooms. The texture is all wrong.

And because those photos are pretty dull, here is a shot of the lovely bouquet of flowers currently on our dinner table.
