Red velvet cupcakes for Medicins sans Frontieres

I took part in the LSE Bake Off this week, a charity event to benefit Medicins sans Frontieres. There were 4 categories: cup cakes, sponges, tray bakes and fruit-inspired goods. I thought about entering two categories, but am glad I stuck to one, as beating together all the sugar and butter for the cupcakes alone exhausted me.

So, I made Red Velvet Cupcakes with cream cheese frosting, based on the Hummingbird Bakery recipe. Saved one aside for tasting (quality control purposes only, of course). Delicious! Unfortunately, they didn’t win. 😦

However, they did sell out along with the rest of the baked goods and £330 was raised for a good cause. Hurray!
